World Recipe: Honey Cake (Tort Medovik)

Honey cake, known as Medovik in Russia, is a classic dessert that combines thin layers of honey cookie with a smooth and creamy cheese mixture. This cake stands out not only for its sweet and balanced flavor but also for its unique texture, which becomes even more tender over time. Perfect for special occasions, it is a true tribute to traditional Russian baking.

Ingredients:

  • 550 g of flour
  • 120 g of butter
  • 125 g of sugar
  • 85 g of honey
  • 2 eggs
  • 2 tsp baking powder

For the cream:

  • 400 g of plain yogurt
  • 400 g of cream cheese
  • 100 g of powdered sugar

Instructions:

  • Sift the flour. In a large bowl, beat the eggs with the sugar, then add the honey and butter.
  • Melt the mixture over a double boiler, add the baking powder, and mix well. Remove from the heat and incorporate the flour until a smooth dough forms. Refrigerate for 1 hour.
  • Divide the dough into 8-10 portions and roll them out with a rolling pin to a thickness of 2 mm. Use a mold to mark circles. Bake each layer at 180 °C for 5 minutes.

  • Mix the cream cheese, yogurt, and powdered sugar until you have a smooth cream.
  • Alternate layers of dough with cream, covering the entire cake. Use the baked scraps, crushed, to decorate.

Refrigerate overnight to enhance the flavors and soften the layers.
