Escamoles are ant larvae harvested from maguey and mesquite roots. They’re a pre-Hispanic delicacy, considered “Mexican caviar” for their delicate flavor and soft texture.

Ingredients:

  • 200 g of escamoles
  • 2 tablespoons of butter
  • 1 garlic clove, chopped
  • 1 serrano chili, chopped
  • Salt to taste
  • Fresh cilantro (optional)

Preparation:

  • In a pan, melt the butter and sauté the garlic and chili until fragrant.
  • Add the escamoles and sauté for 5 minutes, until they change color.
  • Adjust the salt and serve with corn tortillas or on top of guacamole.

This dish is mainly enjoyed in central Mexico’s cuisine and is a luxury at specialized restaurants.
