Cowboy Salad originates from the cuisine of the southwestern United States, where fresh and simple ingredients are combined to create nutritious and flavorful dishes. Inspired by country life and the long days of cowboys, this salad reflects the practical and colorful spirit of Tex-Mex cuisine.

Ingredients:
- 2 cups black beans
- 1 ½ cups corn
- 1 small sprig of cilantro
- 1 bunch of green onions
- 3 medium tomatoes
- 1 avocado (optional)
- 1 tablespoon vegetable oil
- 2 tablespoons vinegar or lime juice
- ½ teaspoon salt and pepper

Preparation:
- Drain and rinse the beans and corn.
- Finely chop the cilantro and green onions.
- Cut the tomatoes and avocado into pieces.
- Combine all ingredients in a large bowl.
- In a small bowl, mix the oil, vinegar or lime juice, salt, and pepper.
- Pour the mixture over the salad and toss gently.
- Refrigerate any leftovers within the next 2 hours.
