Escamoles are ant larvae harvested from maguey and mesquite roots. They’re a pre-Hispanic delicacy, considered “Mexican caviar” for their delicate flavor and soft texture.

Ingredients:
- 200 g of escamoles
- 2 tablespoons of butter
- 1 garlic clove, chopped
- 1 serrano chili, chopped
- Salt to taste
- Fresh cilantro (optional)

Preparation:
- In a pan, melt the butter and sauté the garlic and chili until fragrant.
- Add the escamoles and sauté for 5 minutes, until they change color.
- Adjust the salt and serve with corn tortillas or on top of guacamole.

This dish is mainly enjoyed in central Mexico’s cuisine and is a luxury at specialized restaurants.
