World Recipe: Mutabal

Mutabal is a delicious Mediterranean dip made from roasted eggplant and other fresh flavours. Here’s how to make it!

Ingredients:

– 1 eggplant

– 1 clove of garlic

– 1/2 teaspoon ground cumin

– 1/2 teaspoon sweet paprika

– 1/4 teaspoon salt

– Ground black pepper to taste

– 1 tablespoon tahini

– 4 tablespoons extra virgin olive oil

– 10ml lemon juice

– Coarse salt

 

Method:

  1. Before you begin, cut the eggplant in half lengthwise and generously sprinkle with coarse salt. Let it sit for 30 minutes to release its juices. Then, rinse and pat dry with paper towels.

  1. Score the flesh of the eggplant with deep incisions without reaching the base. Place it in a microwave-safe dish, cover with cling film, make a few holes, and microwave on high for 10-12 minutes until tender.

  1. Once cooked, peel the eggplant and place its flesh in the bowl of a blender or food processor.

  1. Add the garlic clove, ground cumin, sweet paprika, salt, black pepper, tahini, extra virgin olive oil, and lemon juice.

  1. Blend all the ingredients until you have a creamy and homogeneous puree.

  1. If you prefer it cold, refrigerate the Mutabal before serving. You can also enjoy it immediately.
