16 Mar World Recipe: Roasted Pork Shank with Rosemary and Thyme
Roasted pork shank is a traditional dish in German cuisine, known for its crispy skin and tender, flavorful meat. Prepared with aromatic herbs like rosemary and thyme, and accompanied by roasted potatoes, this dish is perfect for a comforting and tasty meal.

Ingredients
- 2 fresh pork shanks
- Whole black peppercorns
- 1/2 onion
- A pinch of salt
- 4 garlic cloves
- 1 bay leaf
- 3 potatoes

For roasting:
- Rosemary
- Thyme
- Ground black pepper
- 3 garlic cloves
- Salt
- 100 ml of broth from cooking the shanks
- 100 ml of cognac
- White wine
- 3 tablespoons of olive oil

Preparation
- Place the pork shanks in a pressure cooker along with the peeled onion, peeled garlic, bay leaf, peppercorns, water, and a pinch of salt.
- Close the lid and cook for 35 minutes once the valve starts spinning.
- Peel and cut the potatoes into medium-sized cubes. Place them on a baking tray.
- Place the cooked pork shanks over the potatoes.

- Add the rosemary and thyme over the shanks.
- Place the whole (unpeeled) garlic cloves and season with a pinch of salt.
- Pour the cognac, the broth from cooking the shanks, and the white wine over the shanks and potatoes.
- Add a pinch of pepper and three tablespoons of olive oil.

- Place the tray in the preheated oven at 200°C and roast for 45 minutes, until the shank is golden and crispy.
- Remove from the oven and serve the pork shanks with the roasted potatoes.
