09 Feb World Recipes: Furikake
Furikake is a versatile and flavorful Japanese seasoning that has gained popularity worldwide. Originally, it was a mixture of ground fish bones to provide additional calcium, but today it consists of a delightful blend of sesame, fish, and seaweed. Perfect for enhancing any dish, from rice to popcorn, homemade furikake is easy to make and add to your culinary repertoire.

Ingredients:
- Salt (15 g)
- Pepper (5 g)
- Dried nori seaweed (15 g)
- Toasted sesame seeds (24 g)
- Fish flakes, ideally katsuobushi (10 g)

Instructions:
- Crush the nori seaweed into small pieces. If you don’t have toasted sesame seeds, you can toast them in a dry skillet until golden and fragrant.

- In a bowl, combine the salt, pepper, nori, sesame seeds, and fish flakes. Stir well to ensure all ingredients are evenly mixed.

- For an extra flavor boost, you can lightly fry the mixture in a skillet over medium heat. Then, add a teaspoon of mirin and a teaspoon of soy sauce, and cook for a few additional minutes until the furikake takes on a crispy texture and a deeper flavor.

- Once ready, store the homemade furikake in an airtight glass jar. You can keep it in the pantry for up to a week, away from sunlight and moisture, or in the refrigerator for two to three weeks.
